
OMG, because I was watching a clip of Kylie backstage last week, I was introduced to the world of Lamingtons. It's an Australian treat that is basically a sponge cake encased in chocolate, with coconut sprinkled all over it. I've read online some have jelly layers or vanilla layers in between the sponge cake as well.

Obviously, I NEEDED to have one!!! I'd never heard of them before and so where was I going to track one down?? I sent a pesky email to Chris over at The Bake Sale to see if he would be up for the deed (though my terse email of MAKE THESE FOR ME! probably wasn't the BEST way of asking).
However, I did manage to find the ONE place in Vancouver that makes Lamingtons! Located in the heart of the GAY VILLAGE is a ghetto looking bakery called Maple Leaf Bakery and They DO IN FACT have Lamingtons!!! The Chinese lady behind the counter is ALL BUSINESS though, as she had NO TIME for my exclamations of "I've been looking ALL OVER for Lamingtons! You guys are the only ones in town who have them!!"
"How many?" she asks, not at all interested in my Lamington search.
"Um, I'll take two, please." I was headed over to Alexis' for a night of wine and cheese, so one Lamington each would suffice! I couldn't resist telling the no-nonsense lady, "I'm soooooo excited to try these!!! I can't wait!!!"
To which she replied, "$4.14"
"Um, okay... I think I have 14 cents here..." I mumbled as I handed her a fiver.
Anyhow, the Lamingtons were delicious! Light and fluffy!! Yet Filling!! I want one right now in fact!!!
I plan on making some soon. Sorry for the wait. I'm going to have to gussy them up a bit though. Plain cake is rather boring. Stay tuned.
